Mother's Day Crêpes.

Thanks to my family for making mother's day so very wonderful!



This is a crêpe recipe that I acquired while living in Belgium in the 5th grade. Our class was given the responsibility of doing a how to speech. I think I taught how to make friendship bracelets and got a D. Can you imagine? How do you give a child who is prepared with enough string for everyone and has her speech memorized a D? Hardly seems fair, Oh well. On to the crêpes! I can still remember almost everything about this speech! For example: allow the crêpe batter to sit for a couple of minutes before using, also for whatever reason the first one never works out great, but all the others do!

Recipe:

3 eggs
1 Cup of milk
3/4 Cup of flour
1 TBSP sugar
1/2 teaspoon of salf
crepe pan

 

1. Whisk all ingredients really well or with a power mixer for 2 min. The mixture should be frothy and bubbly.

2. Let the batter sit for a few minutes. Meanwhile, heat your crêpe pan on just above medium heat. 
3. Give your batter a quick whisk and you are ready to go.
4. Place a very small amount of butter on your pan. 
5. Using a medium sized cookie scoop or 1/4 cup, pour some of the mixture into the crêpe pan. Rotate your wrist around in a circular motion to spread the mixture evenly around the pan. 
6. When it begins to look more opaque and crêpe like flip it over and cook the other side.


7. Repeat until all the batter is gone.

your crêpes should be speckled with a golden brown. You can pour powdered sugar over them, spread them with Nutella, or eat them with sliced fruit, but here is my favorite way.

Heat 1 cup of semisweet chocolate chips, 1 1/2 TBL of butter, and  2 TBL of cream on medium low. Mix until just melted. Spread a thin layer inside each crêpe. Fold your crêpe into rounded quarters and drizzle a small amount of chocolate over the top. Slice up a few bananas and Voila you are in heaven!

Chad also made me a corsage using flowers from our garden. I didn't think to take a pic until after the day had past, but I still think it's lovely. He made it using a red Ranunculus, a white rose, rose leaf, strawberry leaf, and another little white flower whose variety I am unsure of? Thanks Chad!
