Thai Sticky Rice with Mangoes and Bananas

The last couple of weeks have been HOT, near 100 degree weather just about everyday. As I was shopping for my dinner today NOTHING sounded appealing. Then I remembered Thai Sticky Rice with Mangoes and Bananas! It is a little sweet for dinner, but nothing else sounded good. Here's the recipe!


1 1/2 cups Thai sticky rice
1 1/3 cups canned unsweetened coconut milk
1/3 cup plus 3 tablespoons of sugar
1/4 teaspoon salt
1 tablespoon sesame seeds, lightly toasted
2 large mangoes cut into slices
1 sliced banana

Soak rice for at least 6 hours, salt and cook following the cooking instructions that come with your rice. Meanwhile in a separate pot, heat the coconut milk and sugar just until it starts to boil. Reserve 1/3 cup of the mixture and poor the rest on your rice. Let it set for about 30 minutes. Heat the reserved coconut milk and add 3 Tablespoons of sugar just until it boils and the sugar is completely dissolved. Dish into individual bowls. Drizzle with the reserved sweetened coconut milk and garnish with mangoes and bananas.
